Couscous Salad

My friend / student Mary from Boston motivated me to share some of my recipes here. 

Couscous Salad
Couscous is a type of semolina pasta, or let us say a grain of wheat. It can be treated as rice. This is low calorie complex carbohydrate. It blends well with anything and takes on the flavors easily. I roasted the Couscous till it is brown, cooked with water and few drops of olive oil and drained the water. Then I added finely chopped tomato, bell pepper, cabbage, cucumber, onion, cilantro, lemon juice, salt, and mixed it. I seasoned it partly south Indian style with olive oil, mustard seeds, green chillies, and hing (asaphoetida). I chilled and served it cold like salad. It is very delicious. Couscous is a popular Mediterranean / Israeli delicacy. They make many dishes using Couscous.
